African Chicken Recipe

I will start off this post with a quote from my 3 year old. He said "mom this is so good". African Chicken was such a hit tonight I thought I would share the recipe.  I can't find my copy of the recipe, so I had to just remember it the best I could.  And I need to give credit to Patsy, who first gave me this recipe.  I have loved this dish since the very first time i tried it.

Ingredients:

Cooked chicken, chopped (about 2 cups, you can always use more or less if you want)
1/2 diced onion
1 Tbs curry paste (or 1/4 tsp curry powder) I've used both, just depending on what I have on hand.  You can always use more or less curry depending on personal taste.
2 Tbs butter
2 Tbs flour
2 cups milk (I'm really just guessing on the milk, since I didn't measure it tonight.  I just poured until I thought it looked like enough)

Begin by sauteing the onion in a little bit of olive oil on medium high heat.  Next add the curry paste and the butter. (If you're using curry powder wait and add it when you add the milk). Once the butter melts, add the flour and whisk it for about 30 seconds or so.  Gradually add in the milk and whisk it all together.  Lower the heat to medium and let the sauce come to a gentle boil and thicken, stirring frequently.  Once the sauce starts to thicken add the chicken.  And it's done.  So simple!  If you want the sauce to be a little thinner you can add a little chicken stock to thin it out a bit.  The fun part is all the toppings you can put on it.

Toppings:
Basically, anything!  Tonight we had almonds and diced clementines.  Other toppings you can use: pineapple, mandarin oranges, peanuts, green onions, sour cream, coconut, diced red pepper...like I said anything! It may sound weird to put fruit on top of it, but it really is good.  I was skeptical when I first tried it, but as soon as I tried it I was sold. 

Oh, almost forgot...serve over rice.  Tonight I served it over orzo pasta.  I like it better over rice, but since brown rice takes about 45 minutes to cook...I settled for the quick cooking orzo tonight!

Menu Plan: Week of Jan. 16

Since it's MLK Day I've got the day off. I've been a busy little bee so far today. I cooked a turkey for sandwiches this week and a couple of other meals we'll be having. MONEY SAVING TIP: Did you know buying and cooking a whole turkey saves you a lot of money? Turkey breast at the deli counter will cost you around $8.99/lb. A pound of turkey meat will last about 2 days at our house! Over the holidays I bought a 14lb turkey while it was on sale for $1.79/lb. Saving lots of money this way and getting several meals from it!

Back to having the day off...I got some long over due cleaning done, some laundry and I'm making stock out of the turkey bones. I did manage to put together a menu plan for the week, too.

Here's what we're eating this week.

Monday- Baked sweet and sour chicken with oatmeal stir fry

Menu Plan: Week of Jan. 9

Monday- Chicken Milanese with asparagus and spaghetti.

Tuesday- Crock Pot Venison Roast

Wednesday- dinner at church

Thursday- Leftover night

Friday- Dinner out somewhere

Saturday- Black Bean and Pepper Soup; I think I'll try this new recipe! I have a ham bone in the freezer and it's supposed to be cold so this should be good.

Breakfast in our house is usually cereal or oatmeal, but I'm thinking I may boil some eggs for the week and have eggs and toast, too.

Lunch for the week is turkey sandwiches.

New Year, New Starts

Two new ideas that we are going to start in our home this year.  The first is a weekly prayer time at dinner.  I got this idea at the Holiday Extravaganza at our church.  Several ladies talked about Christmas traditions they have in their own families.  One of those was not throwing away Christmas cards.  We now have a basket that holds all of this years Christmas cards.  Every Monday at the dinner table we will pull out a card and pray for that family.  So, if you sent us a Christmas card you will be prayed for over the course of the next year. 

The second idea is a basket of verses.  During the Christmas season we had an advent calendar.  Each night we would open a flap and read a bible verse.  Will loved doing this every night.  I spent yesterday looking online for something similar that we could do every night before bedtime.  My friend Kezia suggested making a jar with verses and letting the kids pull out a verse each night for us to read.  Such a simple idea, why didn't I think of it?!  So, here's our new verse basket and how you can make on too.


I went to Pinterest and found some bible verse cards that I could print out.  I love when other people do all the work and I can just copy it!


I cut the cards apart. 

Then put them in this basket.  The basket was 75% off at Michael's after Christmas sale.  If you turn the basket around you'll find that the fabric says Happy Holidays, so when Christmas comes around again I'll just turn the basket around!  I love a good deal! 

This is a super easy project to start off the new year. 

New Year, New Post

I haven't blogged in a couple of months.  Life just got crazy busy.  It's a new year and I hope to blog at least once a week.  I'm working on a project today that I'll be back later to tell you about.  And if all goes as planned today I will have Christmas decorations put away and a menu plan done.  But we'll see, because usually in our household nothing goes as planned!
